I need tips on how to make cheese enchiladas?

I love enchiladas. I like the corn tortillas just put them quickly into hot oil. It toughens them slightly so that you can stuff and roll them. It makes them more pliable and so delicious! Dunk them into enchilada sauce, then place cheese and onions in before rolling. I usually use a mixture of cheeses, cheddar and monterrey jack. I almost never use Velveeta, though some do. After you have all them rolled up and in a baking pan, pour more enchilada sauce over them before baking. That keeps them juicy and moist.Top with cheese. Yum! Hope that helps.
